Food Friday ~ Cherry Pecan Bread
One of my holiday favorites is a recipe I found years ago for Cherry Pecan Bread. Here’s the recipe. Enjoy!
Cherry Pecan Bread
1/2 cup butter or margarine softened
3/4 cup sugar
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 cup chopped pecans
1 cup drained and chopped maraschino cherries
Mix together the butter, sugar and eggs. In a separate bowl combine the dry ingredients. Add some of the dry mix to the creamed butter mixture alternately with the buttermilk, half at a time. Stir in the pecans and cherries. Bake in a greased loaf pan at 350 degrees for 30 to 40 minutes. Let sit on a rack to cool for about 10 minutes before removing from the pan. Cool, and then drizzle the glaze over the bread. For Glaze: Mix together 1 cup powdered sugar, 1/4 tsp. vanilla and 1 1/2 tbsp. milk till smooth.
