Recipe Of The Week ~ Lemon Drop Cookies

Lemon Drop Cookies
1 lemon cake mix, any brand
1/4 c. flour
1-8oz. package of cream cheese, soft
1 stick of butter, (not margarine),soft
1 tsp. vanilla
Mix together butter and cream cheese. Slowly add the cake mix and flour, scraping sides of the bowl as you mix. Add the vanilla, mix until just smooth. Cover bowl with plastic wrap and chill for 2 hours. Heat oven to 350*, roll dough into walnut sized balls and roll in powdered sugar and place on ungreased cookie sheets, bake 8 to 10 minutes. Don’t over bake them, and let them set a minute after taking them out of the oven before you transfer to cooling racks. I always dust a little more powdered sugar on top after they cool. I have also done this with an orange cake mix and a strawberry cake mix.
