Food Friday Recipe Of The Week: Easy Streusel Cake

Thank goodness it’s Friday! Today’s recipe will be from me since I haven’t had any others volunteered from anyone else, hint, hint. This is a really quick and easy recipe I made up one day when I was in a super hurry. It was a big hit and is still one of my favorite last minute desserts. I call it Easy Streusel Cake.

Just mix together your favorite yellow cake recipe. Pour it into your prepared 9×13 cake pan. Set aside.

With the chopping blade set in your food processor add: 1 ½ cups brown sugar, 1/3 cup cocoa, ½ cup coconut, 1 cup pecans, about 1 tbsp. cinnamon, and ½ cup margarine. Turn on your processor for a minute or two until all the ingredients are combined and finely chopped, but not too long or you’ll have paste. Sprinkle the mixture over the top of the cake, covering the whole thing. Then take a butter knife and swirl it into the cake just a little bit. Bake as usual, 350 degrees for about 30 to 40 minutes. Can be served warm or cold.
